What is the difference between CCX for Service Providers and CCX Sovereign?

Architecturally, they are the same. The difference is aim and implementation; CCX for Service Providers is for managed and cloud service providers who want to offer DBaaS to external customers. CCX Sovereign is for teams who want to build an internal DBaaS.

What are my deployment options?

You can roll your own so long as your infrastructure is based on OpenStack, CloudStack, VMware and you’re running K8s.
